Cypriots love them all year round, as they are perfect pastry to satisfy any appetite. The pastry, pourrekia, have two varieties, sweet or savoury and are traditionally made in the season leading up to the Easter Lenten period.
They are of course now available every day of the year now in Cyprus and are a favourite at many gatherings. To make them pastry dough is made and rolled out into thin sheets, which are then filled with mixtures of sweet cheese, cream, or meat, and then fried. After being fried, the sweet varieties are usually covered in powdered sugar.
