One of Cyprus’ favourite comfort foods, especially on cold winter nights, Trachanas is a hearty soup that feels like home.
Trachanas is a mixture of crushed wheat and milk, soured with yoghurt, that has been formed into small pieces and dried into rusks. To prepare this comforting and delicious soup, the dried rusks are soaked in water to become a fine porridge, which is then boiled with chicken stock or water.
The soup is believed to date back to Ancient Greece and Persia, when robust dishes were eaten in the colder months.
For a heartier soup, add halloumi cheese cut into small squares, crush some fresh pepper over your bowl of trachanas and enjoy.
